Chatamari, a Newari food

Chatamari is a Newari traditional food. Yomari is also popular with Nepalese communities. They resemble a rice crepe or a pizza. Chatamari (Newari pizza).

Chatamari is typically a rice flour crepe with minced meat (typically buffalo or chicken), eggs, and chopped scallions and coriander. It can be made plain and Sugar Crepe or it can be made with combo of veggies for a vegetarian and vegan version. Therefore, Chatamari makes a perfect vegetarian and vegan snack.

Ingredients

  • 2 cup of rice flour
  • 3/4 cup of water
  • 250 gram ground meat [chicken/turkey/lamb/buffalo]
  • 4 eggs
  • 1/2 cup chopped onion
  • 1/4 cup chopped coriander
  • 1/2 cup chopped tomato
  • 1 tbsp green diced chilli
  • 1 tbsp green peas
  • 1 tsp garlic and ginger paste
  • Cumin coriander powder 2 tsp
  • 1 tsp turmeric powder
  • 1 tsp paprika powder
  • Some meat masala/curry powder (1 tsp)
  • Oil 1 tbsp per Chatamari
  • Salt to taste

Steps

  • Take rice flour, make a thin paste in water in a bowl. Remember not to put it too running Add water slowly if needed.
  • Combine the Spices in another mixing bowl Mix the spices with the meat by adding coriander, ginger, garlic paste, cumin, ground turmeric, paprika, garam masala, and salt.
  • Put heat 1tbsp spoon in a pan (medium-high heat).
  • When oil is hot, pour with ladle the thin batter like a pancake and roast 3-5 seconds.
  • Top with a layer of one of the other mixtures.
  •  Sprinkle onion, tomato, coriander, green chilli and the egg yolk on the top.
  • Then cover it with a lid on a low flame. Cook it for 3 to 4 mins. Make sure the egg is cooked to the desired consistency. Take it out from the spatula once you are happy with it. 
  • Chatamari is ready to serve, cut it like a pizza and enjoy.
